Is the Taylor the most popular? Is there a leading competitor in the professional Market?

You need to post a link to a picture or video. Those people you named have lots of guitars. Some, like Eric Clapton and Dave Matthews, have Martin signature models named after them. Neil Young plays Martin guitars.
There are lots of competitors to Taylor, most notably Martin, but there are lots of superior acoustic guitars like Santa Cruz, Goodall, Froggy Bottom, Huss & Dalton, Collings, McPherson, R. Taylor, and others. Not tom mention all the custom luthiers out there.
Edited to add: It’s impossible to tell from the video which exact model it is. It’s either a Taylor GA or GS model.
